Recipe *To ensure an even grind, it's important not to overfill the food processor or blender: Grind no more than a single layer of chicken breast cubes in a food processor at a time. Grind no more than two layers of chicken breast cubes in a blender at a time. (If you want to grind a lot of chicken, I recommend to do it in batches.) **You want the chicken to be ground to the size of rice grains. If you grind it much finer than that, it will turn into a paste.
