  1. Unpack and rise the brisket

  2. Trim all the fat and silver skin on the opposite side of the fat cap exposing the meat

  3. Shake the kosher salt all over the meat

  4. Shake the BBQ rub on top of the salt

  5. Preheat your BGE to 350°

  6. Use a plate setter for indirect heat

  7. Use chunks of pecan wood

  8. Use a drip pan

  9. When the BGE is at 350 and you see that thin blue smoke place brisket (fat side down) in the BGE

  10. Cook until the meat measures 170° in the thickest part

  11. Wrap the brisket in aluminum foil and place back in the BGE
