A quick and easy no-knead cheesy, chilli cob that once you've made you'll be hooked as it's so delicious.

Ingredients

Instructions

  1. Mix the flour, salt, sugar and yeast together.

  2. Add the grated Cheddar and coat well in the flour mixture.

  3. Mix together the olive oil and smoked chilli paste and then add together with the warm water.

  4. Using your hand or a wooden combine to form a dough.

  5. Knead the dough into a dome shape (you can do this in the bowl).

  6. Place dough onto a floured baking sheet and cover with lightly oiled cling film.

  7. Put the dough to rise in a warm place until about doubled in size for 40 - 60 mins depending on warmth of setting.

  8. Pre-heat the oven to 220°C with a roasting tray on the bottom shelf 10 minutes before dough is ready.

  9. Once the dough has risen, dust the surface with flour and cut slashes in the top with a sharp knife.

  10. Place in the oven and before you shut the door add a jug of cold water to the tray to create steam for a shiny and crusty loaf.

I made this loaf today and it turned out perfectly. I subbed the smoked chilli paste for harissa paste and probably was a bit too timid as i couldn’t taste it at all. Lovely hum from the nature cheddar. Would definitely try again with different cheeses and chillies.

We live near a lovely bakery that makes a fabulous cheese and chilli sourdough. It temporarily closed due to Covid leaving us without our weekend bread. of choice. I was so excited when I found your recipe, it's amazing, I've made it several times now and it's come out perfect each time. I used up the last of my smoked chilli paste after the first loaf, I've been using honey and smoked paprika (along side dried chilli flakes and sun dried tomatoes).it works a treat.Thank you for sharing :)

Looking for a recipe for a chilli and cheese bread as a certain Mr Hollywood hasn't got one that I can see, up pops this recipe from the maker of some wonderful jams that I have made in the past. Well, I normally make cobs etc, and knead away (well mixer does) but this recipe doesn't require that, and no second proving either so it is actually quick and easy to do and tastes just wonderful. Must get that paste though, I used dried chilli flakes and not having any idea how much to use I just bunged some in, and though not a strong taste in chilli it does have a bite towards the end, I think once the rabble get their teeth into it I think this will be another one of those breads that will be on the to do list again!

I just made this bur using fresh homegrown chillies that are very hot. Absolutely lovely. Quick and easy to do. Making this every week.
