My whole family is obsessed with this Italian Wedding Soup Recipe! It's easy to make and has such amazing flavor. A definite comfort food pleaser!

  1. In a large bowl, combine all the meatball ingredients except the ground turkey. Once all is combined, add the turkey and mix and roll into 18 meatballs. Place on a baking sheet and refrigerate until ready to use.

  2. Meanwhile, heat a cast iron pot onto medium-high heat. Add butter and olive oil. Sauté carrots, celery and onion until somewhat tender.

  3. Season with the salt and pepper and pour in chicken stock. Bring to a boil for about 10 minutes, or until the vegetables are tender.

I totally LOVE this recipe. The little meatballs are so tender and so delicious. My only change is I prefer spinach to kale but either work. I rarely make a recipe again and again, because there are so many to try. My son says how great it is that I make all kinds of different dishes, and they all come out great. The bad thing is if he likes something a lot, he may never see it again! HA. Well, this is a repeat.

This was easy and everyone loved it! I really like the suggestion of adding ketchup to the meatballs. Why didn’t I think of that in the past?! I’ve always used milk but your way is better.
Also, I love that the meatballs are baked. I always prefer that method, even though my mom always says I need to brown them on the stove. What she doesn’t know won’t hurt her ;)
