  1. Preheat the oven to 400F. Bring large saucepan filled half way with water to a boil, add chicken breast and cook on medium heat until it is cooked thru and chicken is no longer pink inside. Drain the water and let it cool. Using hands or two forks tear the chicken into small pieces.

  2. Warm tortillas on top of the stove for few seconds, it will make them soft and flexible.

Wow, just wow! These were amazing! We love Mexican food and I am always trying new recipes, but this is definitely my new favorite. The sauce was incredible and everything was so easy to make. We used gluten free tortillas and brushed olive oil on the tops instead of butter and after baking I broiled them for a few minutes to get them nice and golden brown.
I will definitely be making these again.
