  1. Cut beef into 1 ½ inch cubes and season with salt, black pepper, 2 tbsp of oil, and 1.5 tbsp of Curry Powder. Set it aside for 10 minutes.

  2. In a pan, add oil and add sliced onions. Turn the heat up to medium-high and saute for 5-6 minutes or until it turns soft, translucent, and slightly brown. Remove the onions and set them aside.

  3. In a large pot, add oil and turn the heat up to medium-high. Add the beef and saute for 3-4 minutes or until the outside is brown. Add in onions and mix them.

Chef's Notes

Curry is also perfect for meal prepping as you can make it in bulk, and it tastes even better the next day! To store, remove the potatoes from the curry and freeze in airtight containers for up to 1.5 months.
