Add oats and water to a large microwave-safe bowl. The bowl should be large enough to hold 8 cups of water, this is important! The oats will rapidly bubble, so if the bowl is not large enough it will flow over. Tightly cover the bowl with plastic wrap and cook for 5 minutes on high power in the microwave. Carefully uncover, stir, and cook for another 5 minutes or until tender and thickened.

Storing: Oatmeal can be portioned into smaller servings, cooled at room temperature, then covered and refrigerated for up to 4 to 5 days.
Freezing: Portion oatmeal out in single servings into quart sized bags. These can be stored for up to 1 month. Defrost the night before in the refrigerator or place bag in a warm bowl of water until no longer frozen.
Reheating: Reheat oatmeal in a microwave in high power in 30-second intervals until warm. On the stovetop cook over medium heat until warm. Add more milk or water as needed to adjust the consistency for both methods.
Yield: microwave (1 ½ cups), stovetop (3 cups), overnight (3 cups), slow cooker (6 cups).
Serving size: 1 cup cooked oats

When cooking steel cut oats in a pot on the stovetop, do you leave the lid on while it is simmering or take the lid off? Thanks.

I tried the microwave method and used a 10 cup Bowl and within a few minutes thank God I looked over there was overflowing oats and water everywhere in the microwave.
I don't think this method works, unless you use a massive Bowl. So now I'm back to the old fashioned stovetop method.
Me too. 1 up oats, 2.5 cups water, pinch salt. Take 10-12 minutes. I leave for a minute or two. Stir and serve.
I usually do my steel cut oats in the overnight version because I live in a warm climate. However it's been pretty cool this winter and I wanted to try them heated but didn't want to wait for them to cook in the morning. I made them in the crockpot and although they could have used a little more stirring during the cooking process I was able to stir them up pretty good when I woke up. I reheated for 30 seconds (they were still somewhat warm) in the microwave and topped with my fruits and nuts. Thanks for the recipe!

oh man, the "microwave on high instructions" did NOT work for us! Steel cut oats boiled over EVERYWHERE within 3 mins. Check you power levels people! After putting ours down to 2 and it seems to find the balance point.
Great recipes, thank you! I would like to offer one correction, re: microwaving steel cut oats. Please use a glass or approved-for-microwave cover. Plastic has been shown to migrate chemicals into the food.
My Scottish grandfather would be turning over in his grave if he saw some of the recipes for porridge (oatmeal). He'd cook his overnight and eat it with a sprinkling of salt. That's it. Anyway, your recipes are a lot better than others I've seen. I'm trying it with the addition of milk but may just use water in future and cooking it in the crock pot. I do add a topping of nuts, fruit (sometimes dried fruit), and flax meal so it's not just salt for me! Thanks for giving us 4 different ways to cook this, but I'm more likely to use the crockpot and make a big batch to refrigerate and freeze.
Oatmeal is our go-to when returning from a gym workout. We had to adjust your recipe as follows to avoid boil-over: Microwaving individual servings of 1/4 c oats to 1c water. Cover snd set microwave power to 3. Cook for5 mins. Stir and cook another 5 minutes for tender chewy oatmeal.
A couple of days ago I found that despite being on WW (Weight Watchers) and losing 26 pounds, my "bad" cholesterol had gone up not down! The nurse practitioner I see recommended eating oatmeal for breakfast. My roommate and I eat our meals together so when I was going to get groceries, she asked if I was getting steel cut oatmeal and I said I was getting old fashioned. Got to the store saw the steel cut ones, looked it up on my phone and discovered they are better than old fashioned in reducing cholesterol. I made oatmeal for breakfast and love steel cut oats.
