Quinoa Salad with Orange Vinaigrette, Avocado & Arugula
Grain salad bowls are one of my favorite easy, portable lunches - they're filling and satisfying and the variations are endless! This quinoa salad takes it to the next level with orange-infused quinoa and an orange vinaigrette for maximum fresh flavor.

Combine quinoa, 1 1/2 cups orange juice, and vegetable broth in a medium pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until quinoa is tender. Allow to cool (this step can be done in advance).
