Press the Saute button on the Instant Pot. Add the ground beef to the pot and season with salt and pepper. Cook, crumbling the meat, until browned. Press Cancel to turn off the saute function.
Add the bell pepper, crushed tomatoes, salsa, corn, taco seasoning and chicken broth or water to the pot. Stir and scrape up any bits that are stuck to the bottom of the pot.

Four minutes of pressure cooking time is perfect for cooking most brands of medium shell pasta. However, if your pasta box says that it takes 12 or more minutes to cook the pasta on the stove, I recommend increasing the pressure cook time to 5 minutes.
You can try other short pasta shapes in this recipe, but may need to adjust the cooking time slightly. See the previous note about pasta cooking times.
I would describe this taco pasta as just a little spicy when made with mild salsa. If you want it less spicy, you can reduce the amount of taco seasoning and replace some of the mild salsa with additional crushed or diced tomatoes. For spicier pasta, use medium salsa.
You can lighten up this recipe by replacing the ground beef with ground turkey or a can of black beans (rinsed and drained). If using beans, I recommend adding them after pressure cooking. Stir the beans in and let the pasta rest for a couple of minutes to warm the beans.

I made this & used my instant pot for the first time. It was really good. The family agreed. Also easy to follow. I had to make 2 substitutions cuz of what I had on hand; stewed tomatoes that I chopped up & wide egg noodles. I will be making it again.
This is one of my family's favorite easy meals. It's simple to throw together with minimal cleanup. Plus, it's loaded with flavor! Sometimes I toss in a can of diced green chiles. Delicious!

I love this recipe!! I use gluten free noodles with an extra 1/2 cup of water and an extra minute of cook time and it turns out perfect. I also add an onion because I love onions. 10/10!

This is now one of our favorites. Very tasty indeed and it made the house smell wonderful. I did make a few modifications because of what I had on hand. I didn’t have salsa, so i just added a little more diced tomatoes and added a can of chopped green chilies. I also added a can of black beans at the end, after the pressure cook. I didn’t have shells, so i used rotini pasta and cooked for 5 minutes under pressure. Because i added the whole box (16oz. ), i added 3 cups of broth to compensate.
Thank you for this awesome recipe, and especially for adapting it to the instant pot. I was going to use the instant pot anyways for the slow cooker version, but this was so much faster and very easy. I plan to make this again soon, maybe next time with shredded chicken. Thanks again.
