Tortilla: Use your favourite flour tortilla, corn tortilla or gluten-free tortilla or wrap will all be fine. You just need a thin flat bread of any description.
Pizza sauce: Use your favourite store-bought tomato sauce or make your own homemade pizza sauce.
Cheese: It is ok to use any cheese. I like to use a combination of mozzarella cheese for its stretch factor and strong cheddar cheese or parmesan cheese for flavor.
One of my favourite hacks when I make pizza for my kids is to make my own hidden veggie pizza sauce, so no matter what they add as topping they are still getting a few extra veggies in their day.
Tortillas come in different sizes the smaller ones make the perfect mini pizzas for kids.
Tortilla pizzas cook fast! So keep an eye on them while they cook. I like to set a timer in case I get distracted.
My kids love having pizzas in their lunchbox, it's a nice alternative to sandwiches and if I use a gluten-free tortilla it is perfect for my son who has coeliac disease.

Great last minute lunch idea. Easy to customise with what we had in the fridge (great to use up odds and ends) and went down great with 10 month old and 4 year old!
