Golden Instant Pot Cauliflower Soup

Ingredients

• 1 tablespoon olive oil
• 1 teaspoon ground cumin
• 8 cloves garlic, minced
• 3 cups vegetable broth
• Pepper (to taste)
• chopped chives
• pumpkin seeds
• 1 teaspoon white wine vinegar
• 2 stalks leeks, sliced (white and light green parts only, about 2 cups sliced)
• 1 large head cauliflower, cut into florets
• 1/2 teaspoon ground turmeric (optional, used mainly for colour)
• sea salt (to taste, I used 1 teaspoon)
• swirl of olive oil
