  1. Preheat oven to 350 degrees. Prepare your rice and set aside. You will need two cups of cooked rice.

  2. Cut off the tops of the peppers remove the seeds, trim the bottoms to help them sit flat in the skillet and rinse thoroughly. In a large pan boil the peppers for 5 minutes, remove from water and turn upside down onto a paper towel to dry.

I have been cooking this recipe (no changes) for a family of 4 since 2020 and it remains on the “Best Meal” category. “Best Meal” at this home, means it’s on the menu rotation calendar, but is often bumped up on the calendar. Also, the 2 fellas have to have more of the stuffing added to their plate…..a pepper full is not enough.

I have made these multiple times and come out perfect every time. I substituted different chopped meat like beef or sausage spicy or mild to taste. I sauté the onion, garlic & add chopped pepper from the left over tops. Depending on the ethnic style I want, I substitute w/different cheeses Mozzarella (Italian) with crushed tomatoes Italian style. If I want to go Spanish style I add less italian spices but add cilantro fresh or flakes, sazon (no salt) and paprika with pepper jack & cheddar and sautee with crushed tomatoes w/green chiles. Main parts of recipe & prep time the same Delish!!!

I have made these twice now with a spin. I sauté the onion, garlic & finely diced pepper tops. I added seasoning and crushed tomatoes and cooked down while rice cooked. I combined everything with uncooked ground turkey and stuffed the peppers. Delicious!!!
