Barbecued mackerel with spices

Ingredients

• 1 clove garlic
• 1 teaspoon ground cumin
• Freshly ground black pepper to taste
• 2 teaspoons olive oil
• 1 teaspoon finely grated orange zest
• 1 tablespoon freshly squeezed orange juice
• 1 teaspoon ground coriander
• 1/2 teaspoon hot chilli powder (optional)
• 2 whole fresh mackerel (each about 280-350g/10-12oz unprepared weight) gutted and cleaned
• Small orange wedges and chopped fresh parsley to garnish (optional)
