The easiest white bread recipe! Lately I make it more than any other bread or roll recipe, it's so fast and so delicious! Plus, I love to save the second loaf for French toast the next day. Makes 2 small loaves.

  1. In a bowl or in a large liquid measuring cup combine water, milk and butter. Heat in microwave until it reaches 120 - 130 on an instant read thermometer, about 1 - 2 minutes (it's okay if butter doesn't fully melt). 

  2. Meanwhile add 5 1/2 cups flour, sugar, salt and yeast to the bowl of an electric stand mixer fitted with the paddle attachment. Mix for about 10 seconds to blend.

  3. Pour warmed water mixture into flour mixture then pour in lemon juice. Mix on a fairly low speed for 1 minute. 

  4. Scrape dough from paddle and switch to hook attachment, scrape sides of bowl. Set to a fairly low speed and let knead 4 minutes, while adding a little more flour if needed until dough consistency isn't sticky (it can stick to the bottom of bowl but shouldn't stick to the sides).

  5. Meanwhile spray two 8 by 4-inch or 8 1/2 by 4 1/2-inch loaf pans with non-stick cooking spray.

  6. Divide dough into two equal portions, and shape into logs each 8-inches long. Transfer to prepared loaf pans.

  7. Cover loaves with a large container such as a cake carrier or spray a sheet of plastic wrap with non-stick cooking spray and drape over loaf pans. Let rise until doubled in volume, about 25 minutes. 

  8. Meanwhile preheat oven to 375 degrees.

I've made this recipe twice, and the loaves of bread are the best I have ever had! They don't quite fluff up like typical home made bread. They're slightly more dense but so delicious. More like the bread I would expect to get at a restaurant.

I was suspicious of 1-hour bread but holy moly this bread is so good! My husband said it was the best bread I had ever made. I used active dry yeast and all-purpose flour and it turned out great! I think I needed about a half cup more flour as I was mixing it.

Hi Jaclyn,

Just made the bread and it is almost all gone :)) Soo good and sooo easy!
Although I made a mistake to add 2 tbsp instead of 2 tsp of lemon juice. The breads structure came a bit gluey/sticky. Could you please help me understand what went wrong?
I used strong flour (12g protein), quick yeast (on the label it says 1 teaspoon for 500g) but I used as per your receipt, used Artisan mixer as per instruction time.
It doubled in size, looks absolutely amazing, the taste is very balanced and super good but the structure is a bit like a cake.
Would appreciate your advice on this! Can’t wait to try it again next week! :)

P.s. I found myself absolutely obsessed with your recipes. :))

I don't normally take the time to write a review. However, I had to today.
I just made this bread and it's tasty and soft. I'm not purchasing bread at a store again. I can make sandwiches with it. That's great!!! As long as you follow the recipe to the T, you will have fresh hot bread moving forward. I will definitely bookmark this recipe. Bravo Cooking Classy!!!

This was so simple and is really one of the best breads ever. Well its right up there with the no knead bread. I only had bread machine yeast but everything else was done exactly as written. Thanks for another great bread recipe!
