Chef's Notes

I recommend using Diamond Kosher Salt. 2 teaspoons of Diamond Crystal salt equals about 1 teaspoon of Morton, making Morton more “salty.” To avoid oversalting the turkey, go with Diamond.

I used these dry brine instructions for 'Friendsgiving' this past weekend and the the turkey came out perfect! The skin was really crispy! I cooked a 12 pound turkey which is the biggest I've ever cooked before. I was really relieved it came out so well!
