Barbacoa beef is authentically made using beef cheeks although some may find that hard to find. For this recipe I made it using beef chuck roast.
The herb that makes this is Mexican oregano, but regular oregano works just as well.
Searing the beef on all sides first allows for a level of flavoring with caramelization. This is optional, I like the crunchy texture on the edges.

I ran out of time in my day and made this starting at 4:30 for a group coming over for dinner. I used the Insta-pot, which I almost never do. It turned out great! It is very flavorful and tender. Everyone loved it. Thanks for the recipe. It was a savior today!
Kevin we do love your recipes! Made this tonight and had to use the grill to char my tortillas, it was the best! The only thing I did different was make some guacamole to smear on tortilla before meat then pico de gallo.
